First one propagates up the yeast to, for example, 350,000,000 cells per ml in a propagation tank. Then this slurry is transferred to a much larger batch of mash, where it is used as yeast at the rate of 5,000,000 to 15,000,000 cells per ml. This gives a great savings in yeast cost. Temperature Tolerant Turbo yeast is excellent for this application, providing the following benefits: Ferments sugar, corn, molasses, barley, wheat and similar High osmo tolerance, stands 28% sugar or equivalent High temperature tolerance, 39C for 14% High alcohol tolerance, easily ferments to 16% Faster fermentation, increased production Purer fermentation, 1% less fusel replaced by pure alcohol More information The fermentation in the first (propagation) tank is always made using 3.6 Kg Temparature Tolerant Turbo Yeast per 1000 liter mash. Then it is tranferred to the next fementer with many times more of the same mash. Nutrient instructions for fermentation 1. Measure the nitrogen level in the mash in Fermenter 2. 2. Add missing nitrogen (preferably as urea) up to 0.3 gram/liter for 16%. 3. Add more nitrogen for faster fermentation up to maximum 0.5 gram/liter, if your cooling system can control such violent fermentation. Control pH as you usually do, same levels. Killing Temperature information The recommended fermentation temperature (for 16% alcohol) with good cooling/temperature control is 30C. With very good temperature control, fermentation can be made in 33C. With state-of-the-art outstanding temperature control (that never exceeds 35C), fermentation can be made in 35C to increase fermentation speed. In alcohol plants--where all alcohol that leaves with the carbon dioxide is trapped--such high fermentation temperature does not result in a lower yield. The yeast always produces 16% alcohol. You are always sure it works. We are aware that some distilleries test the limits and produce 17-18%. But in such cases you are on the edge, and are doing this on your own risk. 16% always works and our recommendation is to stay there.
